  1. Beat eggs with sugar, add pieces of margarine softened at room temperature, add soda. Add flour and starch and knead the dough. The soft dough, dusted with flour, is easy to handle. Place it in the refrigerator for 30 minutes.
  2. Rub the cottage cheese through a sieve, or knead it in a mixer or blender, add an egg and 2/3 cup of sugar, sour cream. Grind the cottage cheese with additives and get a creamy mass. Grease the baking dish with butter and sprinkle with flour. We spread the dough with a flat cake, form the sides and bottom. Spread the curd mixture onto the dough and level the surface. Place the berries on the cottage cheese and place in the oven.
  3. Juicy berries that bake quickly (raspberries, blueberries, blueberries, we have black currants) can be placed 20 minutes after the start of baking. Temperature – 180 degrees. The pie turns out simply wonderful, not at all simple.

Yeast pie is the most satisfying pastry. Soft pastry is all the more pleasant because it doesn’t take much time to prepare it. A standard set of products: yeast, sour cream, flour - and an excellent addition to lunch or breakfast is provided.

Ingredients:

  • milk (1 glass),
  • yeast (15 grams),
  • salt (half a tablespoon),
  • sugar (two glasses),
  • any fresh berries (1 kilogram),
  • flour,
  • vanilla sugar,
  • sour cream (1 glass).

Progress:

  1. Dissolve the yeast in half a glass of warm milk, add salt and add a glass of sugar. Add flour until it reaches the consistency of pancakes. We leave our dough to ferment in a warm place. When the dough has risen well, add sifted flour, butter, milk and sugar, add margarine and eggs at the end.
  2. The elastic dough should stand for 20 minutes. Knead it until smooth and roll it out into a layer 3 mm thick. Place into a baking dish.
  3. Filling: pour a glass of sugar over the berries and let stand for 15-20 minutes. Remove any excess juice, pour into the pan and smooth out. Bake for 30-40 minutes.

Baking from puff pastry is essentially a lifesaver, as it greatly facilitates the process of preparing any dish. The main thing is to defrost the dough in time, and everything else is trivial.

Ingredients:

  • puff pastry – 500 g (this is a whole store package);
  • any berries and fruits - 500 g;
  • potato starch - 3 tablespoons;
  • egg - 1 pc.;
  • sugar – 0.5 cups.

Progress:

  1. Remove the finished puff pastry from the freezer in advance and defrost it. Wash the berries thoroughly and remove twigs and leaves directly under running water. Afterwards, we chop the large fruits, and leave the small ones as is, filling them with sugar and mixing. The excess juice that forms after 10-15 minutes must be drained and starch added to the berries (this is done so that during baking the starch becomes a binding link for the berries).
  2. Take a baking dish, I use a large baking sheet, grease it with oil and set it aside for now. Puff pastry roll out carefully in one direction, place one layer on a baking sheet so that the edges stick out a little, and leave the other on the table and make slits in it.
  3. Place the berries in starch and sugar on the dough,
  4. Cover the top with the cut layer and pinch the edges on all sides. The slits in the top layer of dough should open up slightly to create holes. Gently brush the future puff pastry pie with berries with a beaten egg

The crumbly shortbread dough goes well with the juicy berry filling. In addition, such baking is easy and quick way please your beloved family members. For the proposed version of an open shortbread pie, you can use absolutely any berries that have been in the freezer since the warm season.

For the shortbread dough and berry filling you need to prepare:

  • 5 chicken eggs;
  • 270 g sugar (of which 120 for the dough);
  • 160 g butter or margarine for baking;
  • 350 g flour;
  • 450 g frozen berries;
  • vanillin to taste (if you use only cherries for the filling, you can use cinnamon).

Progress:

  1. Separate chicken eggs into yolks and whites. The first will be used for dough, the second - for filling;
  2. Grind the yolks thoroughly with required quantity Sahara. There is no need to achieve fluffy foam; it will be enough if all the grains simply dissolve;
  3. Chop the soft butter with a knife (or using a blender) together with the flour into crumbs. Then carefully pour in the yolks with sugar and knead into an elastic dough;
  4. Roll out the resulting dough between two sheets of parchment into a flat cake 1 cm thick. Then remove one sheet of paper and transfer the dough into the mold, distribute it so that it covers the bottom and walls. Trim off excess;
  5. Place the defrosted berries in a formed shortcrust pastry basket, sprinkle with vanilla and place everything in the oven for 35 minutes at 200 degrees;
  6. Beat the whites into a foam with the remaining sugar. When the allotted baking time has passed, cover the top of the pie with whipped egg whites and place in the oven for another 5-10 minutes.

Baking made from puff pastry turns out airy, crispy and at the same time incredibly tender. Another argument in favor of puff pastry pies is the speed of their preparation, since the dough can always be prepared in advance for future use or purchased as a semi-finished product in the store. After that, all that remains is to fantasize about the filling and shape of the future product.

For a layer pie with frozen berries you need to take:

  • 500 g of ready-made (preferably yeast) puff pastry;
  • 500 g frozen berries;
  • 200 g granulated sugar;
  • 40 g flour;
  • 20 g starch.

How to bake:

  1. The first step is to defrost the berries. It is better to do this by pouring them into a colander so that excess moisture immediately drains. If there is any doubt about the purity of the fruit, it is better to rinse it under running cold water;
  2. The puff pastry should be allowed to rest for about 10 minutes at room temperature so that it becomes more elastic, but you shouldn’t overcook it either;
  3. Dust a pie pan with flour. Roll half of the dough into a layer (no thinner than 5 mm) and line the bottom and walls of the mold with it;
  4. Mix the defrosted berries with sugar and starch and place in the dough base;
  5. Roll out the remaining dough and cut into strips, from which to form a lattice over the berries. Beautiful view the finished baked goods will look like this if the strips are cut with a curly knife and the lattice is formed by interlacing the strips;
  6. In order for the cake to rise, it needs to be baked at 200 degrees for the first 5-7 minutes, and then reduced to 180. Baking should take another 20 minutes at this temperature.

Even such a fermented milk product as cottage cheese has many requirements. It should be moderately sour, tender and soft, without grains. Only this product is ideal for baking.

But what to do with imperfect cottage cheese that turned out a bit dry and with grains? Of course, use it, but for other baking. You can use it to make a delicious pie with frozen berries, the juiciness of which will soften it and give it tenderness.

For the dough and curd and berry filling you need to have on hand:

  • 2 chicken eggs(1 – for the dough, 1 – for the filling);
  • 200 g sugar (100 grams each for dough and filling);
  • 400 g cottage cheese;
  • 150 ml milk;
  • 90 ml vegetable (refined, odorless) oil;
  • 250 g flour;
  • 80 g starch;
  • 5 g baking powder for dough;
  • 350 g frozen berries.

The order of priority of work:

  1. Beat one egg with sugar until all the grains are dissolved. Then pour in milk and vegetable oil, stir until the mixture becomes more homogeneous. Sift flour and baking powder into the resulting mixture. Mix everything and the dough is ready.
  2. To make the curd layer, in the bowl of a blender (food processor), combine the egg, cottage cheese, half the total amount of starch and the remaining sugar. Beat the mixture until smooth;
  3. Roll frozen berries in the remaining starch. After this, you can begin to form the pie. A springform pan is ideal for baking. Its diameter can be up to 25 cm;
  4. Using a silicone brush, spread a few drops of vegetable oil over the bottom and sides of the mold, then lay out and smooth out the soft dough that slightly sticks to your hands. Then follows a layer of curd, and on top - berries in starch;
  5. The baking process should take place at a temperature of 180-200 degrees, its duration is 45-50 minutes. The finished cake can be removed from the mold only after it has cooled completely.

For a quick berry pie, you need to take the ingredients in the following proportions:

  • large chicken eggs;
  • 200 g white crystalline sugar;
  • 5-7 g baking powder (aka baking powder);
  • 160 g flour;
  • 200 g assorted frozen berries;
  • 10 g butter for greasing the multicooker bowl.

The preparatory processes for cooking will take no more than a quarter of an hour, and the pie will spend another hour in the multicooker bowl.

Baking sequence for berry dessert:

  1. The base of the pie is biscuit dough. For it, beat whole eggs with the recipe amount of granulated sugar until soft foam;
  2. Mix the baking powder with the flour and, sifting the mixture through a fine sieve, add it to the egg mixture. It is better to stir the dough at this stage with a spatula;
  3. Grease the multicooker bowl with a piece of butter at room temperature. There is no need to grease the walls of the mold completely; 2/3 of the height is enough;
  4. Carefully transfer the dough into a multi-pan, level it with a spatula and place frozen berries on top in an even layer;
  5. Bake using the appropriate options from the program menu (Bake/Cake/Steamer). The duration of the program should be 60 minutes;
  6. After the miracle assistant notifies you with an appropriate signal that she has finished her work, you should not run to open the lid and take out the pie. You need to let it stand for 5-10 minutes, and only then, using a silicone spatula, help yourself remove the baked goods from the mold;
  7. The finished dessert already looks very appetizing, so it can be served on the table without embellishments or with a minimal amount of them - lightly dusted with powdered sugar and carelessly scattered green mint leaves.

Helpful Tips:

  • Having decided to bake a pie filled with frozen berries, every housewife asks the question: is it necessary to defrost the berries? Especially if this point is not specified in the recipe.
  • The filling from undefrosted berries turns out juicier, but there is a risk that it will contain so much moisture that it will begin to flow out of the pie.
  • In this case, baking time will also be needed much more, so if the recipe does not indicate that the berries should be placed frozen, it is better to defrost them.
  • You can also create mixes from frozen berries, mixing different types of them or adding fresh fruits to them, for example, apples, pears, bananas, oranges, kiwis, etc.
  • The amount of sugar in any recipe can be adjusted depending on your preferences: reduce for lovers of sweet and sour pies, increase for lovers of sweets.
  • You can decorate the finished cake with powdered sugar, cinnamon, cocoa powder or chocolate chips. And if you sift the powder through a stencil for baking, you can create entire pictures on the surface of the cake.
