Charlotte with condensed milk (video)

You can pamper your family with this wonderful dish not only on holidays, but also on ordinary days. It goes well with strong black tea, fruit compote or lemonade.

We all love condensed milk since childhood, it is very nutritious and very tasty. In addition, condensed milk retains many useful substances contained in fresh milk and so necessary for our body. But where did the real natural condensed milk of Soviet times go? It's hard to find a natural product these days. Let's figure out how to choose the right tasty, healthy and natural condensed milk.

Condensed milk is produced in metal and plastic cans, which do not affect the taste of the product (provided that manufacturers do not violate technology). Never buy condensed milk in dented or damaged metal cans, because the integrity of the inner metal coating may be compromised. As a result, the taste and appearance of the milk will be spoiled, and even worse if hazardous elements contained in the metal get into the product.

Pay attention to the product's production date and expiration date. Natural condensed milk in metal cans is stored for only 12 months, combined (with additives and substitutes) - a little longer, in plastic cans - 2-3 months. If the condensed milk is packaged by the seller in the store, then its shelf life is only 2-3 days. Don't buy expired product!

By the way, even natural condensed milk, made according to all the rules of GOST, may turn out to be of poor quality. This may occur due to improper storage. Condensed milk is very sensitive to storage conditions despite the fact that it is a canned product. It should be stored at a temperature of 0 to +10°C in a cool, dry place. Towards the end of the shelf life, the condensed milk begins to sugar. If you purchased a product whose expiration date has not yet expired, opened it and found a candied mass, this means that the condensed milk was stored in heat or cold.

According to the results of a study by Rospotrebnadzor, 90% of condensed milk on the Russian domestic market contains a large amount of vegetable fats. Moreover, manufacturers don’t even indicate this on the packaging! The situation is the same in Ukraine. Most often it is palm or coconut milk. They use it to save money.

In fact, according to GOST, condensed milk should only contain raw cow's milk or cream, sugar and drinking water. Ascorbic acid can be used as an antioxidant, and some potassium or sodium derivatives can be used as a stabilizer. There should be no vegetable fats, preservatives or sweeteners!

So, you have chosen good quality condensed milk, and now you can start making charlotte.

To prepare charlotte with condensed milk, you will need:

eggs – 3 pcs.
condensed milk – 1 can
flour - 1 tbsp.
baking soda, slaked with vinegar – ½ tsp.
apples – 3-4 pcs.
for greasing the mold:
butter
semolina
for sprinkling:
powdered sugar

If you don’t really like dry biscuits, for example the classic version of charlotte, you can make it more juicy by adding condensed milk. For this charlotte, choose apples that are not sour so that you don’t have to add sugar (although it can be replaced with an additional portion of condensed milk). We recommend dividing the condensed milk into two parts and using one of them to pour the already baked charlotte on top.

Ingredients

  • 3 chicken eggs
  • 1 cup wheat flour
  • 1 cup granulated sugar
  • 2 large apples
  • 100 ml condensed milk
  • 2 pinches of salt

Preparation

1. Break the eggs into the bowl of a food processor, add sugar and salt. You can add some flavoring: vanilla, citrus, etc. Beat the eggs for 3-4 minutes at high speed into a fluffy foam. Try not to beat them, but also not to underbeat them. The mass should change its color to a lighter one and double in size.

2. Add the sifted flour there. Now mix everything together at low speed, trying not to dissolve the egg foam. You can add a couple of pinches of baking powder or a quarter teaspoon of baking soda slaked with vinegar.

3. Peel the apples, wash them, cut them into four parts, and remove the core and seeds. After this, rinse the quarters again in water and cut them into cubes, large or small.

4. Grease the baking dish with vegetable or butter. Preheat the oven to 180 degrees. Pour the dough into the mold and place the apple slices in a chaotic order.

5. Pour half the volume of condensed milk on top and place the mold in the oven. Bake the charlotte for 20 minutes, without opening the door, at a constant temperature. Turn off the heat and leave the pie in the oven for another 5-10 minutes.

6. Remove the charlotte.

First, you need to place the eggs in the refrigerator for a while so that they cool slightly, since cold eggs beat much better. Sugar is gradually added to the beaten eggs, and after the sugar has completely dissolved, you need to start adding flour, but only in small portions.

Then all the condensed milk is added to the dough and the mixture is beaten again. Now you need to add the quenched baking soda into the dough (if desired, you can replace the soda with baking powder - one teaspoon) and again the whole dough is thoroughly mixed.

Charlotte with condensed milk is prepared not only very easily, but also quickly. The baking dish is greased on all sides with butter; do not forget about the sides so that the cake does not burn. Then the mold is sprinkled with a small amount of breadcrumbs; you can also replace the breadcrumbs with semolina.

At the next stage, you need to start preparing the apples - the apples are washed well, then dried and peeled. Prepared apples are cut into thin slices. Some of the chopped apples are transferred to the bottom of the mold, then filled with a slightly runny dough.

The oven is heated to 180 degrees, the charlotte pan is placed in the oven and baked for half an hour. It is also important to regularly check the pie for readiness - insert a wooden toothpick into the pie; if it remains dry, then the charlotte is ready and can be removed from the oven.

Immediately before serving, the charlotte is sprinkled with a small amount of powdered sugar or decorated with whipped cream. This charlotte can be prepared in just half an hour, so this pie is ideal for treating unexpected guests.

Since our childhood, we all know and passionately love apple charlotte. This is the pie that girls are taught to bake during labor class at school, and it is the one that can most often be seen on the table of housewives who are passionate about baking. A delicate biscuit, complemented by a fruity aroma, serves as an excellent addition to the tea table, if not its main decoration.
Today we invite you to deviate a little from the classic recipe for this dessert and prepare a version with condensed milk. Charlotte with condensed milk turns out even tastier than usual. Just try it!

Ingredients

  • Slaked baking soda - 0.5 tsp.
  • Flour - 1 tbsp.
  • Apples - 2 pcs.
  • Granulated sugar - to taste
  • Eggs - 3 pcs.
  • Condensed milk - 1 can

Preparation

In a deep container, first beat the chilled eggs (they form more foam), then start adding sugar and finally flour. Do this slowly to avoid the formation of lumps.

Mix all ingredients with a mixer at low speed and pour in condensed milk. Next, add soda slaked with vinegar and continue whisking. The latter can be safely replaced with regular baking powder.

Grease the pan with a stick of butter, remembering to go up the sides, and sprinkle with semolina or breadcrumbs.

Start preparing the apples. To do this, wash them thoroughly, dry them and peel them. Cut the apples into slices, some of which should be placed at the bottom of the mold and filled with the finished dough.

Preheat the oven to 180˚C and bake the cake for 30 minutes. The readiness of the biscuit is determined by using a wooden toothpick. If there are no pieces of dough left on it, then the charlotte is baked.
